how do i keep a food and symptom diary?

log what you ate, what happened and the delay between them, every day rather than only on bad days. record categories rather than full recipes, since that is what patterns emerge from. give it two to three weeks before drawing conclusions, and never cut a whole food group based on a few entries.

how long after eating do symptoms start?

it depends on the mechanism. reflux and histamine reactions are often within an hour, gastroparesis symptoms can build over several hours because the stomach empties slowly, and bowel symptoms can lag a day. logging the delay is what separates the actual culprit from the last thing you ate.
